Festive seasons are coming and for Indians, every occasions and celebrations are surely incomplete without sweets / mithai / mishti ! Today, I am going to share a healthy sweet recipe. It’s called ‘ Baked Cottage Cheese With Jaggery | Baked Gurer Sondesh ‘. The sweet is made up of chana or cottage cheese. For sweetness, jaggery is used instead of refined sugar, thus, making it healthier. Bengalis among Indians, are fond of sweets and this sweet is pretty common in Bengal. Time required to make Baked Cottage Cheese With Jaggery | Baked Gurer Sondesh : 1 hour

Ingredients for Baked Cottage Cheese With Jaggery | Baked Gurer Sondesh :

  • 500 ml milk
  • 1/2 lemon – squeeze out and extract juice
  • 2 – 3 broken cardamom or elaichi ( 1 tsp cardamom powder can be used instead )
  • 30 – 50  gm jaggery ( depends on the level of sweetness you desire )
  • 1 tbsp ghee or clarified butter
  • 1 tsp rice flour

Baked Cottage Cheese With Jaggery | Baked Gurer Sondesh Recipe – The method :

  • Take milk in a deep pan and bring it to boil
  • Add lemon juice to it so that milk starts curdling to form cottage cheese
  • Keep heating the cottage cheese mixture. You may choose to segregate the water out of the cottage cheese and use the cottage cheese only, hence forth. Or for this recipe, I have used the cottage cheese along with water
  • Add jaggery to the cottage cheese and mix well. Mash well
  • Add rice flour and stir well. Mash the mixture properly with back of the laddle. Let the water dry up on getting heated
  • When the mixture gets thickened, switch off the flame and let it cool for sometime
  • Take a baking pan and grease well with our desi ghee or clarified butter. Pour in the cottage cheese mixture and level it properly. Put the baking pan inside the fridge to set for 20 – 30 minutes
  • Take out the pan and insert the pan into an oven. Bake at 180 Celsius for 25 – 30 minutes
  • Take out the pan and let it cool down to room temperature
